Strawberry bubble tea

2 Cups               Water

2 Cups               Raw turbinado sugar

2 Cups               Packaged tapioca pearls


2 Cups               Fresh strawberries, hulled

1 ½ Cup             a2 Milk™ 2 % Partly Skimmed Milk

1 Cup                 Black tea, steeped and chilled

½ Cup                 Prepared pearls (see above)


In a saucepan, combine the turbinado sugar and water. Whisking frequently, bring to a boil and remove from the heat.

Separately, bring 4 quarts of water to a boil. Add the tapioca pearls and cook until tender, about 8 minutes. Drain.

Mix the prepared pearls with the turbinado syrup and chill for 60 minutes.

To make each drink, use a slotted spoon to add ½ cup of the chilled pearls into a 12 oz. glass.

Combine the strawberries, a2 Milk, and steeped tea in a blender to purée. Once the mixture is smooth and frothy, pour over the prepared pearls.

Garnish each drink with a fresh strawberry and add a bubble tea straw.
