Vanilla Pudding Cups with Fresh Strawberries

Vanilla Bean, split lengthwise
Fresh Strawberries, quartered
  1. In a mixing bowl, beat the egg yolks and sugar until fluffy and smooth.
  2. Sift the cornstarch into the egg mixture and incorporate.
  3. Whisking frequently in a saucepan over medium-low heat, bring the a2 Milk™ and vanilla bean to a simmer.
  4. Whisking, pour ½ cup of the hot milk mixture into egg mixture to temper.
  5. Add the tempered egg mixture to the saucepan with the remaining hot milk mixture. Add the vanilla and incorporate. Whisking constantly, cook until thickened, about 5 minutes. Remove from heat.
  6. Spoon the vanilla pudding into 3-4 dessert cups. Chill for 20-30 minutes before garnishing with quartered strawberries to serve.
